3 ripe bananas, plus 1 for garnish
2 eggs
½ cup of Soya Sunflower Oil (100 ml), plus a little to grease
¼ cup milk (75 ml)
1 teaspoon vanilla essence (5 ml)
½ cup (tea) caster sugar (100 g)
½ cup brown sugar (100 g)
1½ cups wheat flour (200 g)
1 teaspoon baking powder (4 g)
1 teaspoon cinnamon (1 g)
1 cup chopped semi-sweet chocolate (100 g)
Mash 3 bananas and set aside.
Mix the eggs, Soya Sunflower Oil, milk, vanilla and two types of sugar until smooth. Add the banana, flour, baking powder and cinnamon. Mix well for about 3 minutes.
Add the chocolate and transfer the batter to an English muffin tin (22 cm x 11 cm) greased with oil. Cut the remaining banana in half lengthways and arrange on top of the batter.
Bake in the oven.
Bake in a preheated oven at 180 °C for 1 hour, or until a toothpick comes out dry when poked into the cake batter.
