½ cup (tea) caster sugar (100g)
½ cup brown sugar (75g)
2 eggs
1/3 cup (83ml)
1 teaspoon vanilla essence (5ml)
1/3 cup Soya Canola Oil (80ml)
3 mashed ripe bananas
1 ½ cups wheat flour (200g)
2 teaspoons baking powder (8g)
1 teaspoon cinnamon powder (1g)
120g chopped semi-sweet chocolate
Mix the sugar, eggs, milk, vanilla and oil. Add the bananas, flour, baking powder and cinnamon. Mix well until a homogeneous dough forms.
Incorporate the chocolate and pour the batter into an oiled and floured 22x11 cm pan. Bake, in a preheated oven at 180°C, for 1 hour or until a toothpick comes out dry.
Make sure the chocolate is mixed in.
