Coxão mole 300g
Salt and pepper as much as needed
Squeezed garlic cloves 2 pcs
Small strips of bacon or bacon as much as needed
Small carrot cut into strips 1/2 pcs
Chopped onion 1 pcs
Laurel 1 leaf(s)
Ripe tomatoes, seeded and chopped 2 p
Enough water to cover the meat
Peeled potatoes 2 p
Salsa or coriander chopped as much as needed
1. Season the steaks with salt, pepper and garlic
2. Place a strip of bacon and 1 of carrots in the center of each steak. Roll up and secure with a toothpick
3. Heat the margarine in a pressure cooker and brown the steaks until golden brown (this is what will give the broth its color)
4. Add the onion and stir until it wilts.
5. Add the bay leaf, tomatoes and cover the steaks with water.
6. Cover the pan and cook for 30 minutes, or until the meat is tender.
7. Add the potatoes and cook until done. Add the parsley and serve afterwards.
TIP
If you prefer a thicker broth, add 1 level tablespoon of cornstarch dissolved in a little water to the cooking after the potatoes.
