Ingredients

Soya oil to taste
8 chicken fillets
Juice of 1 lemon
12 slices of mozzarella
8 slices of lean ham
1/3 of a portion of spinach
Wheat flour seasoned with salt and black pepper for breading
Water to taste
Salt to taste
Regret pepper to taste

Preparation Method

Wash the fillets with the lemon juice and season to taste with salt and black pepper. Wash the spinach leaves and wilt in boiling salted water. Squeeze well and set aside. Take 4 fillets and cover each one evenly with the mozzarella, ham and spinach leaves. Cover them with the other fillets, making a "sandwich". Trim the edges and close with wooden toothpicks. Brush each set on both sides with very little water, just to moisten. Roll them in seasoned flour for breading and set aside. Place the fillets on a baking sheet greased with Soya Soya Oil, brush the top with more oil and bake in a preheated oven at 200 °C for about 20 minutes, or until the fillets are tender on the inside and browned on the outside.
