Calzone de Carne Moída

Ingredients

Dough
Wheat flour 330 g
Fresh biological yeast 15 g
Milk 120 ml
Yolk 20 g

Filling
Delícia Supreme 100 g
Meat 300 g
Small chopped onion 40 g
Chopped garlic 5 g
Peppers (green, red and yellow mixed) 30 g
Chopped tomato 100 g
Sliced olives 30 g
Colorau 5 g
Salsa 8 g
Chives chopped 5 g
Salt as needed

Assembly
Cheddar flavored cheese 200 g

Preparation Method

Dough
1. Sift the flour and, in a bowl, add all the ingredients (separating the sides where the salt and crumbled yeast will be placed).
2. Knead well until the dough is smooth and dry.
3. Cover the dough and let it rest for 15 minutes.
4. Divide the dough into 5 portions and roll them out on a table sprinkled with flour, forming circles 2 cm high.



Stuffing
5. Melt the Delícia Supreme margarine in a pan.
6. Add the chopped onion and garlic and fry until the onion is transparent.
7. Add the minced meat and fry without stirring.
8. Add the peppers, tomatoes, olives, paprika and salt to taste.
9. Mix, sauté for a few minutes, turn off the heat, add the chopped parsley and spring onions, stir and leave to cool.



Assembly
10. Place a portion of the filling on one half of the pastry, leaving space around the edges.
11. Cover with a portion of ricotta cheese and close into a half-moon shape, pinching the edges together.
12. Brush the surfaces of the pastry with egg yolk and bake in a preheated oven at 180°C for 25 minutes.
