Ingredients

For the dough

  • 2 cups wheat flour (240 g)
  • 2 tablespoons sugar (25 g)
  • 1 tablespoon of Soya Soya Oil (15 ml)
  • 3 egg yolks
  • ¼ cup cachaça (65 ml)
  • ¼ cup water (65 ml)
  • 1 egg white for brushing
  • 1 unit of Soya Soya Oil for frying

For the Filling

  • 460 g fresh ricotta
  • Zestips and juice of 2 lemons
  • Zest of 1 bahia orange
  • 1 teaspoon vanilla essence (10 ml)
  • 1/4 cup caster sugar (50 g)
  • ½ cup heavy cream (125 ml)
  • 1 pinch of salt
  • 1 cup chopped walnuts (100 g)

To finish

  • 1 cup chopped walnuts (100 g)

Preparation Method

For the dough

  1. Mix the flour, sugar, Soya Oil and egg yolks
  2. Add the cachaça and water little by little until it forms a smooth dough
  3. Rest the dough for 20 minutes
  4. Open the dough to a thickness of 0.5 cm and cut into discs 10 cm in diameter.
  5. Wrap in aluminum cylinder
  6. Brush the egg white on the edges to stick the dough together.
  7. Fry in oil preheated to 170°C until golden brown.
  8. Remove the cylinders carefully and set aside.

For the filling

  1. Add all the ingredients and mix until you get a creamy filling

To finish

  1. Fill the cannolis with the help of a piping bag
  2. Cover the cream with the chopped walnuts
  3. Dust with icing sugar to finish
  4. .
