3 tablespoons of Soya Soya Oil
1 slice of Calabrian sausage, chopped
1 clove of garlic, chopped
1 large onion, chopped
4 peeled mandioquinhas, chopped
2 peeled potatoes, chopped
1/2 tablespoon of ready-made seasoning complete with pepper
1 vegetable stock cube
3 cups of water
2 thinly sliced cabbage leaves
In a pan, heat the Soya Soya Oil and fry the Calabrian sausage until golden brown. Remove and set aside. In the same pan, sauté the garlic and then the onion. Add the yucca, potatoes, ready-made seasoning and vegetable stock and sauté. Cover with water and cook until the yuccas and potatoes start to fall apart. Turn off the heat, mash the potatoes and add half the pepperoni. Serve garnished with the remaining calabrese and the cabbage leaves.
