Delícia Cremosa 48 g
White chocolate, coarsely chopped 65 g
Middle bitter chocolate, coarsely chopped 65 g
Sifted egg yolks 3 pcs
Sugar 60 g
Cocoa powder 18g
Cognac 10 ml
Fresh milk 200 g
White and middle bitter chocolate shavings to decorate as much as needed
1. Set aside half the semi-sweet chocolate and, separately, melt the white and semi-sweet chocolates in a microwave or bain-marie. Set them aside.
2. In a mixer, beat the egg yolks and sugar at high speed for 3 minutes or until you obtain a pale, voluminous eggnog. Set aside.
3. In a mixer, whip the fresh cream for 1 minute on high speed or until the cream begins to thicken, without allowing it to reach whipped cream stage.
4. In a bowl, melt the unsalted Delícia Cremosa margarine in the microwave.
5. Remove from the oven, add the cocoa powder and cognac and mix well.
6. Add the melted semi-sweet chocolate, half the eggnog and the whipped cream.
7. Mix well with a whisk and put in the freezer for 30 minutes.
8. In another bowl, mix the remaining melted white chocolate, eggnog and whipped cream.
9. Add the chopped semi-sweet chocolate and place in the freezer for 30 minutes.
10. Place the dark chocolate mousse in a glass container and pour the white mousse on top.
11. Cover with plastic wrap and refrigerate for at least 3 hours.
12. Decorate with white and semi-sweet chocolate shavings and serve.
