Season the chicken with salt and pepper. Mix the oil, paprika, sugar, garlic and herbs in a bowl. Brush this mixture on the chicken and leave to stand for 40 minutes.
In a frying pan, heat the oil to 160°C and sear all sides of the chicken until evenly browned.
Tips: If you need to adjust the point of the bird, finish roasting it in an oven preheated to 200°C for approximately 30 minutes, or until it reaches an internal temperature of at least 75°C.
