Dough
1 dessert spoon of dry biological yeast
2 tablespoons of sugar
1 egg
6 tablespoons of milk
1/2 teaspoon of salt
1 cup of cornmeal
1 teaspoon of fennel
1 1/4 cup of wheat flour
Stuffing
5 tablespoons of Soya Soya Oil
1 small onion, chopped
2 cloves of garlic, crushed
1/2 tomato, chopped
2 1/2 tablespoons of fried smoked bacon
1 can of steamed corn
100 grams of fried Calabrian sausage
Oregano and pepperto taste
1/2 cup chopped parsley and chives
1/3 cup curd cheese
1 1/2 cups grated mozzarella cheese
Cornmeal for sprinkling
Dough: dissolve the yeast in the sugar. Blend the yeast and the other ingredients, except the wheat flour, in a blender. Transfer the dough to a bowl and gradually add the flour until you have a smooth, soft dough. Let the dough rise until it doubles in volume.
Filling: heat the Soya Soya Oil, sauté the onion, garlic and tomato. Add the bacon, sausage and corn. Season with oregano and pepper. Leave to cool and then add the parsley, spring onions and cheeses.
Assembly: roll out the dough, divide into 15 portions, fill and shape into semi-open truffles. Sprinkle with cornmeal and leave to rise for about 40 minutes. Place them on a baking sheet greased with Soya Soya Oil and bake in a preheated oven at 180 °C for approximately 40 minutes.
