Lemon cake

Ingredients
For pasta
1 and ¼ cups wheat flour (160 g)
1 and ½ teaspoon of baking powder (7 g)
½ teaspoon salt (2 g)
2 eggs
½ cup of
Soya Sunflower Oil
(125 ml)
½ cup sugar (100 g)
Lemon zest
Juice of 2 lemons (60 ml)
For the topping
1 cup icing sugar (150 g)
2 tablespoons lemon juice (45 ml)
Zest of one lemon for garnish
Preparation Method
In a large bowl, sift together the flour, baking powder and salt.
In a blender, beat the eggs, oil, sugar and lemon juice.
Mix what has been beaten in the blender with the remaining dry ingredients and the zest until a homogeneous dough is obtained.
Transfer to a greased and floured 18 cm cake tin.
Bake in a preheated oven at 160 °C for 30 min or until a toothpick comes out dry.
In a small bowl, mix the icing sugar with the lemon juice.
Once baked and warm, pour the icing over the cake and finish with lemon zest.
