Ingredients

For pasta

  • 1 and ¼ cups wheat flour (160 g)
  • 1 and ½ teaspoon of baking powder (7 g)
  • ½ teaspoon salt (2 g)
  • 2 eggs
  • ½ cup of Soya Sunflower Oil (125 ml)
  • ½ cup sugar (100 g)
  • Lemon zest
  • Juice of 2 lemons (60 ml)

For the topping

  • 1 cup icing sugar (150 g)
  • 2 tablespoons lemon juice (45 ml)
  • Zest of one lemon for garnish

Preparation Method

  1. In a large bowl, sift together the flour, baking powder and salt.
  2. In a blender, beat the eggs, oil, sugar and lemon juice.
  3. Mix what has been beaten in the blender with the remaining dry ingredients and the zest until a homogeneous dough is obtained.
  4. Transfer to a greased and floured 18 cm cake tin.
  5. Bake in a preheated oven at 160 °C for 30 min or until a toothpick comes out dry.
  6. In a small bowl, mix the icing sugar with the lemon juice.
  7. Once baked and warm, pour the icing over the cake and finish with lemon zest.
