½ cup Soya Corn Oil (125 ml)
1 and ¾ cups water (420 ml)
3 eggs
3 tablespoons of powdered milk (20 g)
½ teaspoon salt (2 g)
1 and a half tablespoons of Panettone essence (10 g)
6 and ¼ cups (750 g)
1 cup caster sugar + 2 tablespoons (220 g)
1 and ½ tablespoon of baking powder (15 g)
2 cups candied fruit (300 g)
1 cup black raisins (150 g)
1 teaspoon of orange zest
¼ cup orange juice (60 ml)
In the blender place the Soya Corn Oil, water, eggs, powdered milk, salt and vanilla essence. Beat until smooth.

In a bowl, place the wheat flour, the sugar, the baking powder and add the mixture beaten in the blender. Mix well with a silicone spatula and leave the dough to rest for 10 minutes. Add the fruit, raisins, zest and juice to the dough and mix.
Divide the dough into two pans and leave to ferment for approximately 3 hours or until the dough reaches the top of the pan.
Bake the panettone in a preheated oven at 160°C for approximately 1 hour.
Variation: Replace the fruit with chocolate chips to make the Chocolate Panettone recipe.
