1 packet of uncooked pasta (penne)
Garlic and salt ready-made seasoning, to taste
1 onion, finely chopped
1 large unpeeled carrot, pre-cooked and diced
400 g diced tenderloin
1/2 ripe, firm pineapple, diced
2 peeled and seeded tomatoes, diced
1 cup frozen peas
Chopped parsley and basil, to taste
2 tablespoons lemon juice
1 cup of Homemade Soya Mayonnaise
Salt and black pepper to taste
In a large saucepan with plenty of boiling water and seasoning such as garlic and salt, to taste, bring the pasta to the boil, removing it from the water before it softens too much. Drain off all the water and place in a salad bowl. Add the other ingredients and, finally, the Homemade Soya Mayonnaise. Mix well and refrigerate for 30 minutes or until ready to serve.
