2 oranges with peel, without seeds and white skins
2 cups sugar
1 cup Soya Oil
1/2 cup orange juice
3 eggs
3 cups flour
1 1/2 tablespoons baking powder
1/2 cup shredded coconut
Soya oil for greasing
Wheat flour for sprinkling
Syrup
1/4 cup sugar
1/3 cup orange juice
1 cup dried shredded coconut
Dough: in a blender, on high speed, beat the oranges, sugar, Soya Soya Oil, juice and eggs until you get a homogeneous dough. Lower the speed, add the wheat flour, blend just to mix and turn off. Add the coconut and baking powder and mix gently. Pour the batter into a greased and floured 26 cm diameter round cake tin and bake in a preheated oven at 180 °C for about 30 minutes. Remove from the oven, leave to cool and unmold.
Syrup: in a bowl, add the sugar, juice and grated coconut, mix well and leave to hydrate. Decorate to taste.
