For the Chicken
Season the drumstick with salt and set aside for 15 minutes.
Mix the flour, eggs and cornstarch in a bowl until smooth.
Put the chicken pieces in the mixture and fry in Soya Soya Oil, preheated to 165°C, until lightly browned.
For the sauce
Mix the juice and zest of the oranges, soy sauce, vinegar, garlic and ginger.
Pour everything into a frying pan and turn on low heat.
Mix in the water and cornstarch.
When the sauce begins to boil, add the mixture of water and starch until the sauce thickens a little.
Add the fried chicken and mix briefly just so that the sauce incorporates into the meat.
Finish with the spring onions, Calabrian chili and sesame seeds.
