Ingredients

  • 400g boneless, skinless drumsticks, cut into cubes

  • 60g wheat flour

For the sauce

  • Juice and zest from 2 oranges
  • 15ml soy sauce
  • 5ml rice vinegar
  • 1 grated garlic clove
  • 2g grated ginger
  • 45ml water
  • 6g cornstarch

To finish

  • 1 teaspoon of Calabrian pepper (1g)
  • 3 sprigs of spring onion, finely chopped
  • 1 teaspoon mixed black and white sesame seeds (1g)

Preparation Method

For the Chicken

  1. Season the drumstick with salt and set aside for 15 minutes.

  2. Mix the flour, eggs and cornstarch in a bowl until smooth.

  3. Put the chicken pieces in the mixture and fry in Soya Soya Oil, preheated to 165°C, until lightly browned.
