Passion fruit mousse cake

Ingredients
For the Cake
1 cup wheat flour (120 g)
1 teaspoon of baking powder (5 g)
½ teaspoon salt (2 g)
1 egg
1/3 cup
Canola Soya Oil
(80 ml)
1/3 cup sugar (60 g)
¼ cup passion fruit juice concentrate (45 ml)
For the mousse
1 can of condensed milk (395 g)
1 carton of UHT cream (200 g)
1 ½ cup passion fruit juice concentrate (375 ml)
1 packet of unflavored gelatin (12 g)
Finishing
Pulp of 1 passion fruit
½ cup caster sugar (100 g)
Preparation Method
In a bowl mix all the dry ingredients for the cake
In a blender, beat the eggs, oil, sugar and passion fruit juice concentrate
.
Mix the liquids into the dry ingredients until you get a homogeneous dough
Transfer to a greased and floured 20 cm diameter round pan
.
Bake in a preheated oven at 160°C for 30 minutes or until a toothpick comes out clean.
After the cake has cooled, hydrate the unflavored gelatin according to the package
.
In a blender, beat all the remaining ingredients and finally mix in the gelatine
.
Put the mousse mixture on top of the cake in the mold, with the side closed with acetate.
Refrigerate until the mousse sets
.
In a saucepan, add the passion fruit pulp and sugar, cook until thick
.
Finish on top of the mousse
