Pineapple Shrimp Rice

Ingredients
1 abacaxi maduro
300g de camarão limpo
Sal a gosto
Pimenta-do-reino a gosto
Suco de 1 limão-tahiti
4 colheres (sopa) de
Óleo de Canola Soya
(60ml)
1 cebola finamente picada
2 dentes de alho picados
3 pimentas-dedo-de-moça finamente picadas
½ xícara (chá) de amendoim torrado salgado sem casca (80g)
2 xícaras (chá) de arroz branco cozido (400g)
½ maço de cheiro verde finamente picados
¼ de maço de hortelã picado
Preparation Method
Cut the pineapple in half, lengthways, preserving the crown.
Remove the flesh from the two bands of the pineapple to form "canoes".
Cut the pulp into medium-sized cubes and set aside.
Season the prawns with salt, black pepper and lemon juice.

Do the shrimp with 2 tablespoons of
Soya Canola Oil
in a frying pan.
Reserve.
In the same pan, sauté the onion, garlic, chili pepper and diced pineapple with the rest of the oil.

Return the prawns and add the peanuts and rice.
Do the rice and finish with the green smell and mint.
Serve the rice inside the pineapple.
