Orange peel 1 pc
Water 500 ml
Medium potatoes, peeled and chopped 2 pcs
Chopped tomato 165 g
Black olives, pitted, sliced 6 pcs
Chopped onion 1/2 pc
Juice from one orange 50 ml
Oregano 4 g
Salt as much as needed
Chopped parsley for garnish as much as needed
1. Peel the orange, squeeze out the juice and set aside.
2. Cut the orange peel into thin strips, taking care to remove as little of the white part of the orange as possible.
3. In a saucepan, cook the peels in the indicated boiling water for 15 to 20 minutes. Strain and set aside.
4. Cook the potatoes, drain and leave to cool.
5. Add the other ingredients to the potatoes.
6. Melt the margarine in a pan.
7. Add the onion and fry until golden.
8. Turn off the heat, add the orange juice, oregano and salt to taste.
