For the dough
500 g mashed roasted cabotiá pumpkin
1 liter of water
2 tablespoons unsalted butter (30 g)
5 cups (600 g)
2 eggs (100 g)
For the filling
2 tablespoons of Soya Soya Oil (30 ml)
½ onion chopped into small cubes
1 clove of garlic, chopped
½ red bell pepper chopped into small cubes
500 g desalted shredded cooked dried meat
Salt to taste
Kingdom pepper to taste
Chopped parsley to taste
For finishing
2 cups wheat flour (240 g)
5 beaten eggs (250 g)
4 cups panko flour (400 g)
Dough: In a saucepan, boil the pumpkin puree, water and butter. Add the wheat flour and mix until you reach a consistent dough. Cook for 5 minutes and when the bottom of the pan is golden and the dough is coming off the bottom, remove it from the pan and let it cool a little. Knead, adding the eggs one by one.
Filling: Sauté the onion with the Soya Soya Oil until translucent, add the garlic and red bell pepper.
Add the onion and red bell pepper.
Add the shredded dried meat, salt, pepper and chopped parsley, sauté for a few minutes. Set aside.
Finishing: Divide the dough into 20 g portions and fill with 10 g of dried meat, close and roll up. Repeat the process until you have finished the dough and the filling.
Put the wheat flour, beaten eggs and panko flour in separate baking dishes and roll the dumplings in the flour, then in the eggs and finally in the panko flour.
Fry the dumplings in the flour, then in the eggs and finally in the panko flour.
Fry the breaded dumplings in Soya Soya Oil at 160°C until golden brown.

To bake the pumpkin: cut the cabotiá pumpkin in half and remove the seeds. Place on a baking sheet lined with a silicone mat with the cavity facing downwards. Bake in a preheated oven at 180°C for 40 minutes. When soft, scoop out the pulp with a spoon. The pulp should be removed with a spoon.
Variation: You can replace the panko flour with breadcrumbs.
