2/3 cup Soya Homemade Mayonnaise
1 tablespoon Soya Creamy Margarine
1/2 cup orange juice
3/4 cup wheat flour
1/4 cup grated Parmesan cheese
3/4 cup of grated coconut
3 tablespoons of water to hydrate the coconut
1 dessertspoon of baking powder
2 tablespoons of sugar for sprinkling
2 eggs
1 cup of caster sugar
Dough: In a mixer, beat the eggs and sugar until you get a white mixture. Using a spatula, manually incorporate the Homemade Soya Mayonnaise, the orange juice, the wheat flour, the coconut previously hydrated with the tablespoons of water, the grated cheese and, finally, the yeast. Transfer to a rectangular tin greased with Creamy Soya Margarine and sprinkled with wheat flour. Bake in a preheated oven at 180 °C for about 45 minutes. Remove from the oven, allow to cool and unmold.
