For the shrimp broth
500g medium dirty shrimp
2 cups of water (500ml)
For the stew
2 tablespoons of Canola Soya Oil (30ml)
1 chopped onion
2 chayote cut into 2cm cubes
2 chopped garlic cloves
1 chopped chili pepper without seeds
2 chopped seedless tomatoes
1 and 1/4 cup shrimp stock (310ml)
Salt to taste
Pepper to taste
Coriander, chopped, to taste
For the shrimp broth
Clean the prawns and set aside the shells and heads
On medium heat, cook the shrimp shells and heads with the water for 30 minutes.
For the stew
Fry the prawns with Soya Canola Oil, set aside.
Simmer the onion and chayote for a few minutes.
Return the shrimp to the pan
Add the garlic, chili pepper and tomatoes.
Add the shrimp stock.
Adjust salt and black pepper.
Finish with chopped cilantro.
