Banana
3 peeled and sliced plantains
1/2 cup wheat flour
2 cups Soya oil for frying
Tapioca
1/2 can of condensed milk
1 1/2 cups of milk
1 cup of tapioca flour
1/2 cup of sugar
2 eggs
1/4 cup of Soya oil
1/2 cup grated dried coconut
1/2 tablespoon baking powder
1 cup half-ripe cheese
Soya oil for greasing
Wheat flour for dusting
Banana: In a deep frying pan, heat the Soya Soya Oil. Coat the bananas in flour and fry until golden brown on both sides. Remove them with a slotted spoon and place them on a baking sheet lined with paper towels. Set aside.
Tapioca: In a bowl, put the condensed milk, milk and tapioca, mix well and leave to hydrate for 1 hour, stirring from time to time. Then, in a blender, add the eggs, sugar and Soya Oil and blend for 3 minutes. Add this mixture to the hydrated tapioca, mix well, add the dried coconut and yeast and mix again.
Assembly: grease a mold with Soya Soya Oil, sprinkle with wheat flour and pour in half the batter. Place the fried bananas, cover with the cheese and then with the rest of the batter. Bake in a preheated oven at 180 °C for 50 minutes. Remove from the oven and serve warm or cold.
