Ingredients

For the dough

  • 1 cup wheat flour (130 g)
  • 1 tablespoon sugar (12 g)
  • 1 whole egg
  • ½ teaspoon salt (2 g)
  • 2 tablespoons of Soya Soya Oil (30 ml)
  • 4 tablespoons whole milk (60 ml)
  • 1 teaspoon of dry biological yeast (5 g)

For the filling

  • 2 cups grated mozzarella (150 g)
  • 2 cups chopped mortadella (150 g)
  • 4 tablespoons cream cheese (60 g)

For breading and frying

  • ½ cup wheat flour (65 g)
  • 2 eggs
  • ½ cup of breadcrumbs or panko flour (60 g)
  • 1 bottle Soya Oil for frying

Preparation Method

  1. In a bowl, mix all the ingredients for the dough and knead until you obtain a smooth, homogeneous mass. Leave to rest for 20 minutes.
  2. Meanwhile, mix together the mozzarella, mortadella and ricotta cheese to form the filling.
  3. Divide the dough into 6 portions of about 50g each.
  4. Fold each dough into a disk and add 55g of the filling and carefully close into a ball. Leave to rest for another 20 minutes.
  5. Bread the balls in flour, egg and breadcrumbs.
  6. In a pan, heat the soybean oil to 160°C and deep-fry the balls until they are golden brown. Serve immediately.
